This is our second summer in a row going and it only gets sweeter. Here’s exactly what we did for the 3 nights we had there (never enough time).
We stayed at the St. Regis. I can’t recommend this hotel enough. The location. The vibes. The rampant chlorophyll water. Just the whole package.
Upon arrival we unpacked then headed to Meat and Cheese for lunch. I had the most delish salad and added tofu (might I say the best I ever had?!).
For dinner we went to Catch, which for some reason is a 10/10 in Aspen but you wouldn’t find me choosing to eat there in NYC. The ambiance is perfection and so is the people watching. It also has some of my fave sushi.

For our first full day we went for a run on Rio grande trail and then watched the Fourth of July parade (a must attend adorable event) at 11:00-11:45. By 12:00 we picked up our e-bikes we rented and biked almost 8 miles to Woody Creek Tavern. We may have encountered crazy wind and hail but we made it and had quite the story to tell! We celebrated with pitchers of spicy, skinny margs.

For dinner we went to Matsuhisa. It’s our second time going there and I wouldn’t go back again. It’s below ground and it’s a fast dinner. Not the best ambiance either.
Every night we went back to our hotel and sat by the fireplace in cozy chairs with a night cap and to recap.

The next day we left at 8:00 for white water rafting. This was about 45 minutes away and really gave us the real experience. I had never been before and it’s an ADVENTURE!!!
For our final (and best) dinner we went to Betula. The martinis and cocktails are 10/10 and the food was really delish. It’s the prettiest restaurant and has an indoor/outdoor situation.

And finally Kemosabe is an absolute HELL YES. Yes yes yes. The hats aren’t inexpensive but the experience and quality is well worth it. We spent well over an hour in there just helping my friend create her masterpiece. Jordan made me mine years ago and has since added accessories like a mini knife with marble handle and sterling snake going down the back brim.
